Ingredients:
2 cups grated rutabaga
1 large egg
½ tsp salt
1 tsp pepper
2 tbsp nutritional yeast seasoning
3 tsp oil
Method:
Place rutabaga in a pot of boiling water and boil for 15 minutes, drain and let cook completely. Pat rutabaga dry.
Beat egg adding in salt, pepper, nutritional yeast, and rutabaga. Mash together with a fork very well.
Heat small skillet over medium heat, using ½ tsp oil cook pancakes 1 at a time using 1/6th of the batter, and 1/6th of the oil for each pancake. Cook each side to a rich brown colour.
Garnish with zucchini applesauce or sour cream and a sprinkle of green onions.
