Roasted Broccoli with Garlic & Lemon


Ingredients:

2 cups of broccoli florets bite size

2 tsp of olive or grape seed oil

1 tbsp of fresh lemon juice

1 garlic clove minced

1 pkg of Trail Mix ground to a powder


Method:

Wash, trim and dry bite size broccoli florets.

Let air dry or spin in salad spinner.

Place in medium bowl and add in oil and toss very well, now add lemon juice and garlic tossing again.

Sprinkle over the trail mix and toss well, coating the florets.

Press any bits right into the broccoli.

Spread on a parchment lined baking sheet.

Preheat oven to 375 degrees

Roast for 30 minutes turning florets occasionally.

You may omit the trail mix, the garlic and lemon are very good on its own.

This recipe is great on its own as a lunch option with trail mix , or as a side dish accompaniment to any protein choice.
