Orange Maple Muffins


Ingredients:

1 plain pancake mix

1 packet of maple oatmeal

½ tsp of baking powder

¼ tsp of baking soda

1 beaten egg

½ cup fine grated chayote squash – squeeze excess water out of the chayote once grated

½ tsp orange zest

2 tbsp of melted WF orange marmalade

2 tbsp of WF or SF Maple syrup

Garnish: ¼ tsp of orange zest, and 1 tsp of WF maple syrup


Method:

Place first 4 ingredients in a medium bowl and combine well.

In a small bowl, lightly beat 1 egg, add orange zest, the marmalade, maple syrup and grated chayote. Combine well.

Pour the wet ingredients into the dry ingredients and combine until thoroughly mixed.

Line a mini muffin tin with parchment paper liners, fill ¾ full.

Bake at 350 degrees for 12-15 min.

Remove from oven and brush with maple syrup and sprinkle orange zest over top.

Recipe yields 2 unrestricted servings. Each serving contains .75 ounce or protein, 1.25 serving of sweetener and ¼ cup of select vegetable.
