Ingredients:
2 large Nori (sushi) sheets- plain
1 serving of konjac noodles
2 cups of vegetables, sliced or julienned – some ideas are as follows:
Cucumbers
Cilantro
Colored peppers
Purple cabbage
Choice of protein if desired – optional – 2-4 oz of chicken or shrimp
Peanut Sauce:
4 tbsp WF peanut butter
1 tbsp of Braggs soy seasoning
1 garlic clove pressed
½ tsp of chili garlic sauce
1 tbsp of fresh lime juice
2 tsp of WF maple syrup
Whisk all ingredients until smooth.
Method:
Prepare konjac noodles as instructed on package, I like to then dry fry the noodles in a non-stick skillet.
Brush nori sheets lightly with water.
Slice each nori sheet into 4 small squares.
Place nori sheets in the shape of the diamond and starting in the tip pointing to you add a little each of all your desired ingredients, noodles. Vegetables, and choice of protein.
Roll the nori tight, the damp nori will stick together, add a touch of water to seal if nori dries out too quickly.
Dip in peanut sauce and enjoy!
Tip: Maintenance can use real unsweetened peanut butter and adjust ingredients to suite your taste.
Tip: Nori is the name for edible seaweed. Use oil and seasoning free sheets.
