Ingredients:
1 cup jicama matchstick sliced.
2 ounces of strawberries sliced.
1 cup cucumber diced.
2 tbsp jalapeno diced.
1 tbsp fresh basil chopped.
1 tbsp fresh mint chopped.
1-2 tbsp fresh lime juice
2-4 tsp olive oil
1 tsp poppy seed
2 cups of spring mix
Method:
In a bowl add, jicama, strawberries, cucumber jalapeno, basil, mint, lime juice, olive oil, and poppy seed. Toss all ingredients well and spoon over a bed of spring mix.
Tip: Omit strawberries and substitute in sweet bell peppers.
