Buffalo Broccoli Meatballs



Meatball Ingredients:

6.5 ounces of ground turkey

1 egg beaten

1 cup of fine chopped broccoli

2 tbsp of diced green onion

½ tsp salt

½ tsp pepper

1 tbsp Franks Hot Sauce

1 bag of cheese dorados- ground to fine crumbs


Meatball Sauce:

1 tbsp Franks Hot Sauce

1 tbsp Amazin Mayo

1 tsp vinegar

1 tsp parsley

1 tbsp green onion

1 minced garlic clove

¼ tsp salt

¼ tsp pepper


Method:

In a medium bowl add ground turkey, egg, broccoli, green onion, salt, pepper, hot sauce and nacho cheese chip crumbs.

Mix well with hands combining ingredients well.

Shape into 1-inch balls and place on parchment lined baking sheet.

Bake at 350 degrees for 30 minutes, turn every 10 minutes so the meatballs brown evenly.

You can also brown in a large skillet or cook in a crockpot on low for 4-6 hours.

Method:

For sauce place hot sauce, mayo, vinegar, parsley green onion, garlic, salt and pepper, and blend until smooth.

When meatballs are ready to serve drizzle sauce over top.

Recipe yields 8 oz of protein and 1 unrestricted pack, and 1 cup of vegetable. This is a great recipe to split into 2 servings if you are protein splitting during the day.
