Broccoli & Chayote Slaw


Ingredients:

1 cup of broccoli stalk julienned

½ cup of celery julienned

½ cup of chayote squash julienned

1 pkg Trail Mix optional


Dressing:

2 tsp of olive oil

1 garlic clove minced

1 tsp vinegar

¼ tsp salt

¼ tsp pepper

1 tbsp fresh lime juice

1 tsp maple syrup

1 tbsp Amazin Mayo


Method:

Wash drain and dry vegetable ingredients.

Julienne broccoli stock, celery, and chayote.

Place all vegetables in a bowl and add trail mix toss well.

Blend all dressing ingredients until smooth, drizzle over salad and toss well.

Garnish with fresh parsley.

Tip: You may add only a tbsp if desired for a little crunch to your salad, saving the rest for snacking at another time in the day.
