1 whole fresh salmon, de-scaled and cleaned
1-2 fresh lemons
Fresh dill
Fresh parsley
4-6 cloves of garlic minced
Salt and pepper
Olive oil - optional
Pat dry your fish inside and out. Place salmon on baking sheet on parchment paper. Score 6 diagonal lines with a sharp knife across the width of your fish, 1-2 cm deep depending on the thickness of your fish. In the inside of your fish spread fresh dill, parsley, garlic, salt and pepper. Now fill each score with the same mixture , squeeze fresh lemon juice into the score, and lay fresh lemon sliced inside the fish. You may drizzle olive oil over fish (not required).
Bake at 450 for for first 15 minutes, then turn down to 375 and bake for 15 more minutes. For larger fish you may need to increase your bake time. 145 degrees in the thickest part of the fish is a good temp for finished fish, with the color being opaque and fish flakes easily. This method will work well for any fish!
