Ingredients:
1 pkg IP Apple Oatmeal
½ tsp baking powder
2 tsp granular sweetener
2 tsp apple pie spice
1 egg + 1 egg white beaten
1 oz milk
1 cup fine grated jicama or chayote squash
(squeeze out moisture)
Apple Pie Spice:
4 tbsp ground cinnamon
1 tbsp allspice
2 tsp nutmeg
1 ½ tsp ginger
½ tsp cardamom
¼ tsp ground cloves
Combine apple oatmeal, baking powder, sweetener, and apple pie spice. Add in beaten egg and milk, whisk to combine. Fold in choice of grated vegetable. Pour into 6-8 inch sprayed baking dish. Bake at 350 for 50-60 min. You can brush with IP Maple Syrup and sprinkle with apple pie spice to garnish.
